An exquisite Night of Food, Cognac Pairings, The Remy Martin way



Whether served neat, over ice, or in cocktails, the versatility of Rémy Martin cognac lends itself to be enjoyed in a variety of ways and occasions. Case in point: a very special dinner menu created with a flight of fine Remy Martin cognacs.

On Tuesday evening, Remy Martin together with The Local Grill held in store a special treat for 15 of their special guests, comprising cognac aficionados and enthusiasts in what was a wonderful night of gastronomic delights paired beautifully with bespoke Rémy Martin cognac and cocktails.

Upon arriving, guests were first treated to Remy Martin cocktails, a start to a very memorable evening. The Remy Martin Brand Ambassador, the evening host, Mickael Bonnamy then gave a brief introduction to the story of Remy Martin while Chef Kylie Snow of The Local Grill, took guests through the evening’s three-course menu paired with bespoke Rémy Martin cocktails, including 30 days wet-aged meat with Rémy Martin VSOP and a special dessert paired with Rémy Martin XO.

The starters , chicken mushkaki (sugarcane speared chicken thighs with spicy peanut sauce), meatballs (with tomato gravy served on creamy potenta), grilled prawns (in lemon garlic sauce, served on guacamole) and local salad (mixed greens, feta, avocado, tomato, cucumber and local dressing) were paired with Remy Martin Old Fashion. This is a full-bodied short, strong, but surprisingly smooth classic cocktail that is ritually stirred to perfection.

The entrée options consisted of braised oxtail (slow braised in red wine), Salmon (herb crusted), 30 days wet aged Remy Martin Fillet, Mushroom Risotto (with truffle oil drizzle and shaved parmesan) and the 30 days wet aged Remy Martin rib eye steak. This was paired with Remy Martin VSOP champagne cognac. It is a perfect harmony between the firm character of ripe fruit and subtle notes of liquorice, offering a great complexity of elegant and powerful aromas.

The dinner ended with a serving of malva pudding (with crème anglaise/ ice cream) and/ or Remy martin chocolate mousse (with poached pears, crumbled ginger biscuit and shaved chocolate). This was accompanied by Remy Martin XO. This the perfect expression of Fine Champagne opulence on the palate with mature flavors of juicy plums and candied oranges, with a hint of hazelnuts and cinnamon.

All Rémy Martin creations have an unparalleled signature style: harmonious, rich, and long on the palate, which reveals a unique aromatic intensity. The amazing complexity of Rémy Martin’s VSOP and XO each have different signature flavours: floral, fruity, oaky and spicy notes representing the aromatic spectrum of the Fine Champagne Cognacs.
