Ming-Chi Kuo, a well-known Apple ecosystem analyst, remarked about E-ink display technology on Twitter today. The guy is progressing, and the Cupertino company is presently testing this display form.
Apple is testing E Ink's Electronic Paper Display (EPD) for future foldable device's cover screen & tablet-like applications. The color EPD has the potential to become a mainstream solution for foldable devices' must-have cover/second screen thanks to its excellent power-saving.

This technology, also known as Electronic Paper Display (EPD), is currently mostly employed in the consumer market to outfit e-readers. On the latter, the display’s visual depiction is closer to paper, providing better reading comfort than a traditional screen.
Ming-Chi Kuo says in his tweet that an EPD color screen, as part of the iPhone, has the ability to equip a folding iPhone. Indeed, this sort of device’s low energy consumption is ideal for this, particularly when maximizing the device’s autonomy.
