Today, we continue with our series on dishes for expectant mothers. Let’s cook some plantains in coconut sauce. Plantains are a good source of dietary fibre.

They also offer good amounts of energy, proteins, folic acid, minerals, tissue-building elements, and minerals that help one enjoy a healthy pregnancy.

Coconut milk, during pregnancy, improves blood pressure and acts as an excellent source of healthy fats, promoting the growth of a healthy baby and increasing the volume of breast milk.

This is definitely a healthy treat for anyone with a sweet tooth.

What you will need:

4-5 yellow plantains

500ml coconut milk

4 tablespoons sugar

1 teaspoon ground cardamom

250ml coconut cream

1 teaspoon vanilla essence

What to do:

Wash the plantains thoroughly

Peel and cut them into two or three sections

Arrange some of the banana peels in a single layer on the bottom of the pot, this will help the bananas not to stick as you cook

Now arrange the bananas in the pot over the peels

Pour the coconut milk over the plantains, add sugar, vanilla and the ground cardamom

Cook the plantains until they are soft and the coconut milk has reduced to almost a 1/3. Remove them from the stove

Pour coconut cream over the cooked bananas and continue to cook for another five minutes and the bananas are ready to be served

Serve and enjoy
